Nigerian Chicken Stew
Ingredients
11 Roma tomatoes
7 Tablespoons of salsa
1 onion
4 cloves of garlic
Grilled chicken
Cooking oil
Directions
Blend tomatoes and boil on medium heat until water evaporates
Add enough cooking oil to cover the tomatoes
Add onions and garlic
Cook on medium low heat, stirring regularly for about 15 minutes
Add salsa, and continue cooking and stirring
Wait until the tomatoes are cooked, and when the soup clearly separates from the oil
Toss out any unwanted oil
Add chicken and chicken broth
Add seasoning and cook on medium heat for 10 more minutes
Serve with white rice.
