Nigerian Chicken Stew

Ingredients

11 Roma tomatoes

7 Tablespoons of salsa

1 onion

4 cloves of garlic

Grilled chicken

Cooking oil


Directions

  • Blend tomatoes and boil on medium heat until water evaporates

  • Add enough cooking oil to cover the tomatoes

  • Add onions and garlic

  • Cook on medium low heat, stirring regularly for about 15 minutes

  • Add salsa, and continue cooking and stirring

  • Wait until the tomatoes are cooked, and when the soup clearly separates from the oil

  • Toss out any unwanted oil

  • Add chicken and chicken broth

  • Add seasoning and cook on medium heat for 10 more minutes

Serve with white rice.
